Kathryn Vaughn's Sumptuous Shortbread

You will need: Air Pan, parchment paper, timer
2 1/2 cups of King Arthur's flour (red and white bag)
1/2 cup light brown sugar (packed)
1 cup (two sticks) butter
1 teaspoon real vanilla
Soften butter by leaving it at room temp.  Line air pan (sometimes called a jelly roll pan) with parchment paper (cookies will burn in regular cookie sheet).  Add light brown sugar and vanilla (I use a potato masher) until smooth.  Preheat oven to 425.  Add sifted K.A. flour little at a time until all blended.  Form into two balls. Do NOT chill. Form into squares line up in rows of 5. Bake for 7 min. turn pan around in over bake another 3 to 5 min. depending on how hot
your oven it.  Cool on wire rack, store in wax paper lined tins.
