1/3 cup light mayo
1/4 cup fresh cilantro (coarse chop)
1 tablespoon of fresh lime juice
Coarse salt and ground black pepper
8 slices of multi-grain or whole wheat bread, toasted
1 head of bibb lettuce, or equivalent amount of baby spinach
1 mango, peeled, pitted and thinly sliced
1 avocado, pitted and thinly sliced
1. Combine the mayo, cilantro and the lime juice in a bowl. Season with
salt and pepper. If you like lime, use more. Same with cilantro.
2. Divide the mayo mixture evenly on the 8 bread slices. Top four of the toasts with the lettuce (or spinach), the avocado and the mango.
