Bob Bonner's Zucchini with Thyme


1 medium green zucchini, shredded (skin and all)
Two (
2) cloves of chopped garlic
Thyme, salt and pepper 
A few slices of a day old baguette  
Lemon zest


1.  Chop up the bread into tiny bits to make chunky bread crumbs and add them to a pan of melted butter.  Bob uses lemon-flavored grapeseed oil from Wildtree in with the butter.

2.  Brown the bread crumbs.

3.  In another pan, melt some more butter, then add the chopped garlic.  A minute later add the shredded zucchini. Heat it up for a few minutes. Add some thyme, salt and pepper. To serve, put some zucchini on the plate and top with some crumbs.
