Ginger Martin's Creamed Sweet Potatoes



Ingredients:
Creamed Sweet Potatoes
 3 lbs. sweet potatoes (about 6 medium)
 Salt
 Water
 ¼ cup butter or margarine
 ¼ cup packed brown sugar
 2 Tablespoons cream sherry
 1/8 teaspoon pepper
 
Preparation:
In 4 qt. pan over high heat, heat sweet potatoes, 1 teaspoon salt and water to cover potatoes to boiling.  Reduce heat to low; cover; simmer 20 to 40 minutes until fork-tender; drain and peel.

In large bowl with mixer at low speed, beat sweet potatoes and butter until smooth.  Add remaining ingredients and ¾ teaspoon salt.  Beat at medium speed for 2-3 minutes until sweet potato mixture is light and fluffy.
