Sumptuous Shortbread Cookies

It is never fun to get sick, but it's down right awful at Christmas time! I have no idea who 'gifted' me with this bug, but I've been laying low so I don't gift it to anyone else!

I have had several requests for my
shortbread recipe. So here it is as promised! I've tried something new this year and it's made it a lot quicker! Instead of making little loaves, I've rolled them into small balls. You have to watch and turn the tray about twice before the 8 to 12 minutes are up (they only need to be golden) They are just wonderful with coffee or tea. Hope everyone has lots of cozy moments this holiday!

The Holidays are So Sweet!

It's not just that I enjoy baking, I really enjoy creating my very own recipes. I'd like a dollar for every friend who says "you should write a cook book!" In fact, I have just started, in earnest, to at least put all my scribbled notes in order and type them up. I have quite a pile!

I also wanted to share with others, particularly because of the holidays, how helpful I have found Clausen's Bakery. They have to-die-for breads, quiches, cookies and desserts, but I mostly go there for my ingredients. There is 'Gregg's Cake' (named after my son as it is his favorite) which calls for the dark chocolate mint discs that get melted into middle layer filling. They have the most fun gourmet flavors of chips you can imagine. I love melting 'cinnamon' chips in an apple turnover, 'peanut butter' in dark chocolate cookies and 'french vanilla' in a cranberry walnut cookie. Those are my favorites. The colors are great for making things really special for the holidays, too!

Sharing the Beauty

‚ÄčI think it's fun to share my hobby with my friends. There are so many photos that I take when I see something worth shooting, but so many times what I saw and what the camera recorded are so different that they get deleted before I get home. I just took the this photo the other day. It's probably one of the last I can take without gloves on. It's hard to shoot with gloves on! This is the Yahara River - at the very beginning of the Yahara River Trail.
