Spaghetti Squash

I can't believe I've spent this many years without Spaghetti Squash!  Last week, I bought one on a whim thinking I could use up some meat sauce I made the week before.  I also found a recipe that just added turkey bacon, garlic and parmesan cheese to the squash so I thought ... why not?  I cut it open, cleaned out the seeds, put a little butter, salt and pepper on the squash, put them cut-side down on a jellyroll pan and let them bake for 45 minutes.  Then came the test ... would this be easy or would it just be a mess and I'd end up ordering pizza?  With delivery coupons in arms reach, I took out the squash, turned them over and grabbed a fork.  It said to run the fork over the flesh and it would just come off the skin and look exactly like spaghetti.  Okay sister friend ... I've had enough Pinterest fails in the last 18 months to know most things aren't as easy as they say.  So here we go ....  AH!  It's SO easy.  You barely even have to touch the squash with the fork and it indeed comes off looking like spaghetti.  I was surprised at how tasteless the squash is so it really just acts as a texture and will take on any taste you put with it sort of like tofu.  It was amazing with the sauce and the turkey bacon.  I can finally have 'pasta' at night again!  Because of the carbs, I haven't done that in years.  So I encourage you to grab a spaghetti squash, or any other healthy food you've had your eye on to try but haven't for some reason or another ... and go for it!
