Amy Abbott's Ambrosia Salad
It was my job to make this salad for the Thanksgiving meal, and it was the easiest thing to prepare! It has been eaten every year for as long as I can remember by my family on this holiday. I expect it tastes nummy all year round! It tastes exceptional at 5 am, the day after Thanksgiving, while preparing to go shopping.
2 cans mandarin oranges
1 can chunk pineapple
1 bag mini marshmallows
1 small container half & half (or just use sour cream if you can't find sour half & half. It's not the liquid stuff you put in coffee!)
Original recipe calls for shredded coconut, but I can't stand it, so I leave it out
Drain excess liquid out of cans of fruit. Combine fruit in medium size bowl. Add marshmallows. Stir in half & half until mixed well. Cover and refrigerate for a few hours before serving.
