1/2 pound rotini pasta
1/2 pound green beans
1 can (15-19 oz) garbanzo beans, rinsed & drained
1 green or red pepper, your choice
4 oz. summer sausage
1 package mozzarella cheeseDressing
1 tablespoon chopped garlic
1 tablespoon Dijon mustard
1/4 cup olive oil
1/4 cup red wine vinegar
Cook pasta, rinse under cool water, drain and place in large bowl.
Cut pepper, summer sausage, and green beans into approx. 1/2 inch size.
Add together the above ingredients.
Cook green beans until tender, approx. 5 minutes.
Cool rinse, drain and add beans to pasta.
Add garbanzo beans.
In a separate bowl whisk garlic, mustard, vinegar and olive oil to smooth consistency.
Add dressing to mixed ingredients in large bowl and toss salad.
Cover and chill for several hours. Serve with a sprinkle of cheese.
