Pasta Salad

Ingredients
½ pound rotini pasta
½ pound green beans
1can (15-19 oz) garbanzo beans, rinsed & drained
1 green or red pepper, your choice
4 oz. summer sausage
1 package mozzarella cheese

Dressing
1 tablespoon chopped garlic
1 tablespoon Dijon mustard

1/4 cup olive oil
1/4 cup red wine vinegar

Directions
· Cook pasta, rinse under cool water, drain and place in large bowl.
· Cut pepper, summer sausage, and green beans into approx. ½ inch size.
· Add together the above ingredients.
· Cook green beans until tender, approx. 5 minutes.
· Cool rinse, drain and add beans to pasta.
· Add garbanzo beans.
· In a separate bowl whisk garlic, mustard, vinegar and olive oil to smooth consistency.
· Add dressing to mixed ingredients in large bowl and toss salad.
· Cover and chill for several hours. Serve with a sprinkle of cheese.
