Lanette’s Lazy Salsa Chicken
Listener Stephanie, sent this one in, saying, “It’s simple, versatile, and yummy! Everyone is circling the kitchen like vultures!”
At 11AM, I put four chicken breasts into my slow cooker, then put a jar of salsa over it and set the slow cooker on low. Around 5PM, I open it up, pull the super-tender chicken out, shred it quickly with two forks, and put it back in the slow cooker with the salsa. I think the chicken can handle being on low for up to eight hours, even though mine was ready after only six hours.
I serve with hot cooked rice (my husband wants to spoon his over some rice), and the kids and I fill some soft flour tortillas with toppings. Teenage daughter eats the chicken with some hard tortilla chips.
