Lanette's Lazy SpaghettiO's Pie

SpaghettiO's Pie

Pie Crust
2 cans of Spaghettios with Meatballs
Shredded Mozzarella
4 pieces of bread
Butter
Garlic salt

Pour 1 can of Spaghettio’s into pie crust, pour 2 TB of milk into Spaghettio’s and mix.  Top with garlic powder to taste.  Top with shredded mozzarella.
Pour 2nd can of Spaghettio’s, repeat garlic powder and Mozzarella.
Cut off crusts of four pieces of bread, butter and top with garlic powder.  Add to top of Spaghettio’s pie.
Bake at 350 for 20-25 minutes... until bread is golden brown.

Lanette’s Lazy White Chicken Chili

It’s a dump-and-go sort of lazy! Dump these five things into a crock pot and enjoy...

  • 1 pound of boneless, skinless chicken breasts (or chicken thighs)
  • 2 small cans of green chilies (or 1 jar salsa verde)
  • 2 cans of white Northern beans, drained
  • 6 cups of chicken stock
  • 2 tsp. cumin

Cook on Low for 8 hours

Shred chicken and serve chili with your favorite toppings, cornbread, or tortilla chips.

Lanette's Blog: Scary Stuff

A couple months ago, I had just picked my kids up from my parent’s house. We were in the car… almost home and I realized that the seatbelt was hitting my collar weird. It hurt. So when I went inside I took a look at a mirror and there it was… a lump. And this is when everyone says… 'don’t Google it.’ I Googled it. Not only was I dying, but I’d soon be losing my nose and my left, big toe. Oh my gosh. What you never wanted to read on the internets. So, I made an appointment with my doctor and the wait began. My biggest fear isn’t drowning or being caught in a fire… it’s leaving my kids too early. I know you always need your
mom…but when you’re still cutting up their chicken…it’s too early. Tick tock… tick tock… still waiting. Then… the day came. I smiled as I walked in. I smiled as she took a look at it..felt around…and look perplexed. I smiled as she said… 'we need to take a better look at this. I can’t rule anything out.’ I think because part of me thought I was overreacting and she’d say… 'go home, Lanette. It’s nothing.' I smiled as I walked out to my car, even held the door for someone and told them to have a great day. I got to my car…and I cried. I had a good, ugly cry… and then made my next appointment. I found myself looking at my kids differently. I was constantly in the mirror checking to see if that damn lump changed shape or location. Every morning, I allowed myself to believe there was a chance it magically disappeared overnight. But every morning… there it was. Finally… the
day came for my chest x-ray. I forced myself to smile through it and was so happy to see the results in just a couple hours. Clean. Nothing. Breathe… But what was this? So… off to ultrasound. Results? Possibly osteoarthritis… but, nothing is conclusive. We need an MRI to be able to send you to Rheumatology. WAIT! My head is spinning. Let me work on getting my body back to where it needs to be. Having a baby at 42 is still wreaking havoc on this body. So… I needed to get inflammation under control… and I finally needed to drop this baby weight. THEN… I’ll reassess. So… here I am. Happy I didn’t need a referral to Oncology. Working on ME. Grateful. Thankful. But scary stuff… scary stuff, indeed.

Lanette's Lazy Ramen Casserole Recipe

Magic 98 listener, Laura raised nine kids and fostered a few more. She knows a thing or two about cooking. Here’s her recipe that I’m stealing for Lanette’s Lazy Ramen Casserole.

1 lb hamburger (fried & drained)
1 pkg Ramen Noodles (put in baggie & smash... kid job!). Any flavor.
1 can diced or stewed tomatoes
1 can your favorite veggies
1 cup water (more if fresh/frozen veggies)

Throw everything in same pot/pan including Ramon seasoning... simmer until hot! Enjoy!

Lanette's Blog: Bring It

I’m not a huge fan of pumpkin spice, but this is still my favorite time of year. I love waking up… turning on the coffee maker, flipping on the fireplace and enjoying the chill in the air. But it’s also scary this year… because with winter and the pandemic… we’re going to be inside a lot. I’ve noticed I’m nesting just like I did when I was getting ready to welcome all three of my babies into the world. I’ve been cleaning out closets, storage areas and cabinets. It’s got to be straightened and organized before we head into the isolation of winter or I may lose my mind. I know I’m a bit of a stickler on this kind of stuff, but I think it’s so important this year. I hope you’re figuring out what you need to do for you and your family in order to look this winter in the face and say… 'BRING IT!’ I will do it with that aforementioned coffee in hand, for sure. Here we go! We got this!

Lanette's Blog: It's The Little Things

A birthday tradition in the Hansen household is a cake from The Chocolate Shoppe. It’s magnificent and I highly recommend one for your next birthday… or random Tuesday, every day is a great day for one of these masterpieces. So last month I was online ordering my husband’s cake for curbside pickup… and I came across the option of ordering an ice cream sandwich kit. This was The Chocolate Shoppe on Midvale… I’m not sure if the other locations are doing it. You choose your cookie flavor(s); chocolate chip or Heath. Then you choose your ice cream flavor… then you can add on an additional topping that you roll the outsides of your ice cream cookie in… because that’s needed… obviously. Well, last Friday I decided to get one for our family to enjoy for Father’s Day weekend…and got one for my brother-in-law and some good friends who showed up a couple months ago with a build-your-own donut kit from Greenbush Bakery and it made our day. The folks at The Chocolate Shoppe were amazing as always, it was fun to do the drop-offs and… oh my gosh, everything was so delicious! I tell you this for a couple reasons. First, because The Chocolate Shoppe is a top-notch, local business and I wanted to brag on them. Second, because at this point… even when we’re starting to open our circles a little bit… it’s still about the little things. A fun project as a family and a cute delivery for another family. Pay it forward when you can and remember to cherish the little things.
